Step 1: Choose the Best Gluten-Free Bread
The bread you use makes a big difference! I always look for a dense, coarse-textured loaf though any type will work. It holds up well when mixed with other ingredients, so you won’t end up with a mushy mess. My favorite when I haven’t made my own is Schar Gluten-Free Multigrain Bread.
Step 2: Get the Right Gluten-Free Sausage
The sausage is key to that rich, savory flavor. Most stores have good gluten-free options these days, but always double-check the labels. If you’re unsure, don’t be afraid to ask—better safe than sorry!
Step 3: Fresh vs. Dried Herbs
This is where you can play with flavor. Fresh herbs add a pop of color and a bright, lively taste, while dried herbs give a stronger, deeper flavor. I recommend using fresh whenever possible, but dried herbs work well too—just use a little less since they will pack a bigger punch in your herbed gluten-free stuffing.

Cooking Up Your Thanksgiving Gluten-Free Stuffing
Ingredients
- 1/2 lb bulk pork sausage
- 1/2 cup (1 stick) butter or margarine
- 1 1/2 cups sliced celery
- 1 1/2 cups chopped onion
- 1 package (14 oz) gluten-free herb-seasoned cubed stuffing
- 1/2 cup sweetened dried cranberries
- 1/2 cup coarsely chopped apples
- 1 tbsp Rosemary Herb Seasoning Mix
- 2 cans (14.5 oz each) chicken broth
Instructions
- Preheat oven to 350ºF. Place sausage into (10-in.) Skillet; cook over medium heat 3-5 minutes or until no longer pink, breaking into crumbles. Remove Skillet from heat and transfer sausage to paper towel-lined plate. (Do not drain Skillet.)
- Add butter to Skillet; heat over medium heat 1-3 minutes or until foamy. Add celery and onion; cook and stir 4-5 minutes or until vegetables are crisp-tender.
- In Stainless (6-qt.) Mixing Bowl, combine stuffing, cranberries, apples, seasoning mix and sausage. Add vegetable mixture and broth; toss until moistened.
- Spoon stuffing into Deep Covered Baker. Cover and bake 30 minutes. Carefully remove lid using Oven Mitts, lifting away from you; bake an additional 30 minutes or until stuffing is golden brown and heated through.

Cook’s Tips:
You can make this in the Enameled Cast Iron Skillet with Lid from start to finish.
To make this stuffing in the Brownie Pan, bake the stuffing cups uncovered, at 350°, for 15 minutes.
