Gluten-Free Spaghetti Hoops and Meatballs
Ingredients
Pasta
- 1 tsp olive oil
- 1 large clove garlic
- 1 15 oz can of tomato sauce
- 30 oz hot water (I use the tomato sauce can twice)
- 1 vegetable stock cube (I used Knorr)
- 125g Gluten Free Anellini pasta
Meatballs
- 1/2 cup plain panko breadcrumbs
- 2 tsp Italian seasoning Mix
- 1/2 tsp Three Onion Rub
- 1/4 tsp black pepper
- 1/2 tsp salt
- 1 lb. ground turkey
- 1 large egg
Instructions
- Preheat the oven to 400ºF. In a bowl, stir together the panko breadcrumbs, Italian seasoning mix, three onion rub, salt, and pepper.
- Add the ground turkey to a separate large bowl, then add the egg and breadcrumb mixture. Use your hands or the Deluxe Stand Mixer to mix everything together until combined.
- Divide using the small stainless steel scoop and shape the meat into roughly 40 meatballs.
- Place the shaped meatballs on a half sheet pan. Transfer the meatballs to the oven and bake for 25 minutes, or until cooked through.
While Meatballs Cook
- Add the olive oil and pressed garlic clove to a non-stick saucepan and warm over a low heat for a couple of minutes until fragrant.
- Pour the tomato sauce and hot water into the saucepan.
- Crumble in the vegetable stock cube, stir and bring to the boil.
- Turn down to a simmer and add the gluten free Anellini pasta. Simmer and cook for roughly 15 minutes, or until the pasta has absorbed most of the liquid, stirring occasionally.
